12 pancake recipes from the Norland community

For pancake day, second-year students Holly and Kiera (Set 43) organised ‘Norland’s supercali-pancake-making-expialidocious recipe book’ with current students, prospective students, Newly Qualified Nannies (NQNs) and Norlanders contributing their go-to recipes.
It doesn’t need to be Shrove Tuesday to enjoy a pancake, so whether you prefer sweet or savoury, whether you enjoy a vegan or dairy free diet, or just want to try something different, why not take a look at some of the Norland community’s recipes!
Traditional pancakes
Ingredients
- 100g plain flour
- 300ml milk
- 2 eggs
- 2tbsp butter
Method
- Mix the flour, milk and eggs.
- Heat a small frying pan over a medium heat.
- Place a small amount of butter in the pan and swirl it around as it melts so the pan is covered.
- Ladle some batter into the pan, tilting it to move the mixture around so you get a thin and even layer.
- Cook for about 30 seconds or until lightly golden and then flip it over before cooking the other side.
- Top with your favourite filling.
Peanut butter and banana pancakes
Ingredients
- 200g self-raising flour
- 1 ripe banana
- 2 eggs
- 1tbsp smooth peanut butter
- 3tbsp oats
- 5tsp cinnamon
- 1tsp coconut oil
Method
- Mash the banana in a bowl and then whisk in the eggs, peanut butter, cinnamon and oats until combined.
- Melt the coconut oil in a frying pan over a medium heat, then add a tablespoon of the mixture for each pancake. Cook one at a time.
- Cook for two minutes or until golden brown, then flip and repeat on the other side.
- Allow to cool slightly and serve.
Gruffalo pancakes
Ingredients
- 1 egg
- 200ml milk
- 220g plain flour
- 2tsp honey
- ½tsp bicarbonate of soda
- ¼tsp cinnamon
- 50 blueberries
- Knob of butter
Method
- Put the flour, bicarbonate of soda and cinnamon into a bowl and mix well.
- Put the milk, egg and honey together in a jug and mix well.
- Make a well in the middle of the dry mixture and pour in the milk mixture.
- Whisk everything together until you have a smooth batter with no lumps.
- Melt a knob of butter in a frying pan and add the batter one ladle at a time. Drop five blueberries in each heap of batter.
- Flip the pancakes once bubbles appear on top and cook until they are brown.
- Allow to cool slightly and serve.
Vegan pancakes
Ingredients
- 220g of plain flour
- 680ml of almond milk, you may need a bit more to loosen the mixture
- ½tsp salt
- 5tbsp of vegetable oil, (or other neutral-flavoured oil) plus extra to cook the pancakes
Method
- Add the flour and salt to a mixing bowl and make a well in the centre.
- Gradually pour in the almond milk, whisking as you go until you get a smooth batter.
- Add the oil and whisk until smooth and combined.
- Heat a tiny dash of oil in a non-stick pan. Once hot, add a fine coating of the batter to the pan and tilt it so it spreads out into a nice circle.
- Relax for a few minutes while the batter firms up. When the wobbly softness goes, pop a spatula under an edge to see how it’s cooking underneath. Once golden on the underside, flip it and repeat on the other side.
- Serve and enjoy!
Pancake kebabs
Ingredients
- 70g plain flour
- ½tsp of baking powder
- 1tbsp caster sugar
- 65ml milk
- 1 medium egg
- 1tbsp melted unsalted butter, plus extra for cooking the pancakes
- A small amount of chocolate to melt
- 1 banana, chopped
- Strawberries, chopped
Method
- Mix the flour, baking powder and caster sugar together.
- Add the milk, egg and melted butter to the dry ingredients and whisk until smooth.
- Heat some unsalted butter in a pan.
- Ladle in the pancake mixture and cook until bubbles appear. Then flip over and cook for two minutes on the other side. Remove from pan.
- Cut out little circle shapes from the pancakes.
- Thread the pancake circles onto a skewer along with some chopped up strawberries and banana.
- When complete, drizzle over some melted chocolate.
- Serve and enjoy!
Banana pancakes
Ingredients
- 2 eggs
- 4 bananas
- 2tsp of unsalted butter
Method
- Using a fork, mash the bananas in a small bowl.
- Add the eggs and mix together.
- Heat a frying pan over a medium heat and add a teaspoon of butter.
- Once the butter has melted, add two tablespoons of the mixture to the pan and fry for two minutes, then flip the pancake and cook on the other side for another two minutes.
- To serve, place on a plate and add fruit.
Sheet pancake
Ingredients
- 200g self-raising flour
- 1tsp baking powder
- 1 egg
- 250ml milk
- Butter for greasing
- 150g blackberries
Method
- Preheat your oven to 180 degrees.
- Wash and halve the blackberries.
- Mix the flour, baking powder, egg and milk together in a bowl.
- Once mixed, pour the mixture into a buttered tray.
- Put the blackberries on the top of the mixture.
- Place in the oven and bake for 20-25 minutes.
- Remove from the oven and cut into evenly sized pieces.
Sweet potato pancakes
Ingredients
- 1 small roasted sweet potato, flesh only (about 115g)
- 2 eggs, beaten
- ½tsp cinnamon
- 1 ½tbsp rapeseed oil
Method
- Add the potato flesh to a small bowl and mash until smooth.
- Whisk in the eggs and cinnamon until combined.
- Add half of the oil to a large frying pan and place over a medium/high heat. Once hot, add 2-3 spoonfuls of mixture to the pan.
- Cook for 1-2 minutes or until browned on one side and then carefully flip, cooking for a further 2 minutes on the other. Transfer to a kitchen towel covered surface.
- Add the remaining oil to the frying pan and repeat with the remaining batter. Serve once cool.
These are great as a weaning finger food!
Fluffy American pancakes with bacon and maple syrup
Ingredients
- 112g plain flour
- 1/2tbsp caster sugar
- 2tsp baking powder
- 1 egg
- 175ml milk
- 25g melted butter
- Maple syrup
- 6 rashers of baco
Method
- Sift the flour and baking powder into a bowl.
- Add the sugar and mix.
- Create a well within the dry ingredients.
- Microwave the milk and butter until the butter has melted.
- Pour the wet ingredients into the dry ingredients.
- Mix until there are no lumps and let sit for about an hour.
- Heat a large frying pan and add a small knob of butter. Ladle the batter into the pan. When the pancakes begin to bubble on the surface, flip and cook the other side.
- Meanwhile, cook the bacon in a separate frying pan over a medium heat.
- Add the bacon and maple syrup on top of the pancakes and serve.
Soy and dairy free American pancakes
Ingredients
- 4tbsp dairy free butter
- 2tbsp of brown sugar
- 1tsp of baking powder
- 2 eggs
- 6-8tbsp of plain flour (depending on preferred consistency)
- A splash of oat milk
Method
- Cream the butter and sugar together.
- Add the eggs slowly, making sure the mixture doesn’t curdle.
- Add the baking powder and flour a spoonful at a time, folding them into the mixture.
- Once combined, add a small knob of butter to a frying pan and ladle the batter into the pan. When they begin to bubble on the surface, and flip and cook the other side..
- Top with your favourite sweet or savoury topping and enjoy!
Banana, raisin and apple oat pancakes
Ingredients
- 2 bananas
- Handful of raisins
- 1 apple chopped into small chunks
- 2 eggs
- 5tbsp of oats
- Butter for frying
Method
- Soak the raisins in hot water for five minutes until juicy. This will reduce the chances of burning.
- Using a fork, mash the bananas in a small bowl.
- Add the eggs, the oats, chopped apple and raisins to the mashed banana and mix together.
- Heat a frying pan over a medium heat and add a teaspoon of butter.
- Once the butter has melted, add two tablespoons of the mixture to the pan and fry for two minutes, then flip the pancake and cook on the other side for another two minutes.
- To serve, place on a plate and add fruit.
Scotch pancakes
Ingredients
- 200g plain flour
- 1tbsp baking powder
- Pinch of salt
- 1tbsp caster sugar
- 1tsp ground cinnamon
- 1 large egg
- 300ml milk
- Vegetable oil, to fry
Method
- Add the dry ingredients to a mixing bowl and mix together.
- Beat the egg and milk into the mixture with a handheld or electric whisk.
- Heat a non-stick frying pan over a medium heat and add some oil.
- Spoon in a small ladleful of batter to make a pancake about 10cm across.
- Fry for about one minute until the edges of the pancake are firm and bubbles have started to appear on the surface. Flip over and fry for another 30 seconds until golden on both sides.
- Serve with your favourite toppings.
Banana spelt flour pancakes
Ingredients
- 1 banana
- 1 egg
- Splash of milk
- 2 heaped tbsp spelt flour
- ½tsp baking powder
- Splash of olive oil
Method
- Add the dry ingredients to a mixing bowl, then beat the egg and milk into the mixture.
- Heat a non-stick frying pan over a medium heat and add some oil.
- Spoon in a small ladleful of batter to make a pancake.
- Fry for about one minute until the edges of the pancake are firm and bubbles have started to appear on the surface.
- Flip over and fry for another 30 seconds until the pancake is golden on both sides.
- Serve with your favourite toppings.
